# Instructions:

01 - Season chicken thighs generously with salt and pepper. Heat olive oil in a large cast iron skillet over medium-high heat. When shimmering, add chicken skin-side down and sear for 6-8 minutes until golden brown. Flip and cook 5 minutes more. Remove and set aside.
02 - Pour off most fat from skillet, leaving about 2 tablespoons. Add minced garlic and sauté for 2 minutes until fragrant and lightly golden. Add a splash of chicken broth to deglaze, scraping up browned bits.
03 - Whisk flour into garlic mixture and cook 1 minute. Gradually add remaining chicken broth, whisking constantly to prevent lumps. Return chicken to skillet, cover, and simmer 25 minutes until chicken is cooked through.
04 - Meanwhile, boil potatoes in salted water for 15-20 minutes until fork-tender. Drain thoroughly and return to pot.
05 - Remove chicken from gravy. Stir in heavy cream and thyme, then season with salt and pepper. The gravy should coat the back of a spoon.
