Spray crockpot with cooking spray and place chicken thighs in bottom. Season with salt and pepper if desired.

Sprinkle ranch packets over chicken and add chicken broth.

Cut cream cheese into chunks and distribute around the chicken.

Cook on low for 4-6 hours or high for 2-3 hours. Stir halfway through if possible.

Add frozen vegetables during the last hour of cooking.

Stir everything together, shred chicken if needed, and garnish with fresh parsley.
